The Best Ever Potato Cheese Soup

This is a soup my Sister LaRae got from a pot luck at work it was like 32 yrs ago. It is so delicious I had to share it with you. My family loves it so I make it every winter.

POTATO CHEESE SOUP

1 lb of bacon ( I use the thick bacon so I fry about 8 slices ) save the bacon grease!

3 to 4 tomatoes

1 bunch of green onions

5 lbs of potatoes or as much as you like. I like lots of potatoes so I make a big pot that covers 2 burners and do 10 lbs.

8 to 16 cups of Chicken broth

1 can of green chilies. Lg or small  what ever you like or as many as you like.

1 can of milk

and a bunch of cheese ( we like Monetary jack or Mozzarella cheese )

Fresh French bread and butter

This is the thick bacon I buy. So first you fry the bacon then set it aside.

While the bacon is frying I’m cutting up the tomatoes

and green onions to put in the bacon grease.

Then you let it cook for about 20 min.

While I’m frying the tomatoes and green onions in the bacon grease I’m peeling the potatoes and cutting them like this.

Now I put like 8 cups of water then I put 4 tbs of the chicken broth powder and whisk away. You can put it to your liking you can also use canned broth what ever you like.

So I have the potatoes cooking til tinder.

Chop the bacon

Here I have the green chilies and the can of milk waiting to be put in the soup.

After the tomatoes and green chilies are done add them to the boiling potatoes and Chicken broth.

Then add the green chilies and bacon to the soup.

When the potatoes are tender and ready to eat add the milk and some cheese.

Have a bowl of cheese ready so people can put cheese in their own bowls to there liking.

The Coolest Can Opener Ever

I got this can opener from Pampered Chef. I love it because it does not leave a sharp edge. I’m sure so many of us have been sliced with the led of the can.

 

I had a hard time trying to figure it out. On the bottom there are 2 round things you put the edge of the can in between 2 round things. Turn the handle to the right until it goes around once or it  is a little easier to turn. Then turn it to the left then it will let go of the can.

 

Then on the edge of the can opener there are pinchers. With the pinchers you grab the edge of the lid and squeeze the button on the bottom of the can opener then pull.

 

The lid will come right off. And there you have your goodies!

The First Enchiladas I ever made

Perfect Enchiladas       Recipe courtesy of Ree Drummond

Ingredients

SAUCE

1 tablespoon canola oil

2 tablespoons all-purpose flour

One 28-ounce can enchilada or Mexican red sauce

2 cups of chicken broth

1/2 teaspoon salt

1/2 teaspoon black pepper

MEAT

1 tablespoon canola oil

1 pound of ground beef

1 medium onion chopped

Two 4-ounce cans diced green chilies

1/2 teaspoon salt

10 to14 corn tortillas

Canola oil, for frying

1/2/ cup chopped black olives

1 cup grated sharp Cheddar cheese

Chopped fresh cilantro, for garnish

Preheat the oven to 350 degrees f. For 40 min.g

Beans and/or rice for serving

Frying my ground beef with garlic and….

Onion I chopped it up and added it to my ground beef and garlic.

After I fried it I put it in a bowl then I added…..

Yes Green chilies

I mixed the green chilies in the fried ground beef, garlic and onions. Then I took a bit and I could not believe how good it was. Now it’s ready to make the enchiladas.

Then I grated the cheese and it’s ready to go in the enchiladas.

Chopped the cilantro now it’s ready

Here are my olives and green onions

Now I’m ready to make the red enchilada sauce

Putting the flour in it

Cooking the flour and oil

Then I added some chicken broth and let it heat up

Then I added 1 can of red enchilada sauce

Here it is ready to dip the tortillas

then I add cheese

ground beef

Olives and green onions

I put some sauce in the bottom of  the pan and start filling it up with some yummy goodness

I topped it off with the left over cheese, olives and green onions

Just pulled out of the oven and ready to serve. And I have to tell you they were so Delicious you have to try them.

The Best Coffee made from Home

I bought some Starbucks Coffee and had the grind it for me. Well because I do not have a grinder. So I bought the House Blend.

 

Here is my coffee Medium House Blend. I put about 3 big spoons fulls of the House Blend then I add some magic to it!

 

 

The magic is the Cinnamon Plus from Pampered Chef. I put about 1 tea spoon over the coffee grinds put the water in the pot and wait for it to brew.

 

 

While brewing it is smelling so wonderful. Just about ready to start my day!

 

 

Here is my new coffee cup I got it from Walmart on Saturday when I was in Napa with my Mother. I bought her and my girls one too 😉 They are our Coffee / Tea cups. Now I do add creamer to my coffee and I did not get a picture of it but it’s Cinnamon Vanilla ( coffee mate ). As you can see I love Cinnamon plus. Lime, Garlic and Cilantro Rice

If you like lime then you will really like this rice dish. I got this rice dish from the Pioneer Woman.

For the ingredients;

Rice

Oil or Butter

Garlic

3 Limes

Chicken Broth

Cilantro

 

Now I always use butter this is the first time I used oil. And it worked just fine. So I put some oil in the skillet with some minced garlic. You can also put in an onion at this point.

 

 

Then I stirred in 3 cups of rice and let it got lite golden brown.

 

 

Pour in 6 cups of chicken broth. The zest and juice of 2 limes. Sorry I did not have pictures of the limes.

 

 

Bring it to a boil. Then put a lid on it turn it to low and let it simmer for 20 min.

 

 

While the rice is cooking I chop the cilantro.

 

 

After it’s done I juice 1 more lime and put it in with the cilantro mix it all together and it taste delish.

We had this with Enchiladas I will be blogging that one next.

Steak Sandwich

My husband was wanting a steak sandwich so we were at Safeway and they had some on sale if I remember correctly it was half off. Now I did not cook it that night I thing it was like 2 or 3 days after I bought it that is why its a little brown. But it was very yummy. I cut it up and put some salt and pepper on it.

 

And put the steak in my cast iron skillet with some butter 😉 And I did let the butter get a little brown to give the steak some flavor ( good flavor ) After it was done cooking I took the steak out of the skillet and put the onions in with a little more butter.

 

I sliced the onion and then cut the slices in half to make half rings. Then I sauteed the onions to put on the sandwich.

 

So I used sour dough bread then put the steak, cheese and sauteed onions. And it was yummy!

My Wrought Iron

As I had said in another blog that my husband was saying that I like wrought iron curly things so I’m going to share them with you I hope you like them just as much as I do 🙂

My plate rack I got from my Sister in law Shawnacee and it’s hanging in my Kitchen.

I have 2 of these they are in my living room. It looks like two worms facing each other 🙂 I got them from Ross.

My hanging candles in the living / dinning room. I have had this for years I can’t recall where I got it.

I got this from a second-hand store it came with out the glass votive’s I got them at Joann’s Fabric in Concord Ca. And the candles from Ross.

There are 2 of these and they are in my dinning room one on each side of my chalk board. I got them from Ross.

I just love this little stand I got it from my Sister in law Shawnacee. I put our water bottles on it but at this time we are out of them 🙂

I love this beautiful hanging candle holder I got it from my friend Belen and I got the candle from Ross.

This beautiful mirror is from my Sister in law Shawnacee. It’s in the hall you can see it from the dinning room and living room.

This to is in the hall above the mirror. I got the beautiful plate rack from my beautiful Sister LaRae who passed away Nov. 2009. And I miss her dearly!

I got this shelf from Ross. This is to keep everything off the counter and keep the bath room cleaner if that is possible with one bath room and 3 gals and 1 guy.

These are my awesome towel racks/wine racks. I ordered these from Wayfair online.

My small backers rack has curly wrought iron. I got it on a Craigslist add. It sets in my dinning room.

My tea-cup holder I got it from My Sister in law Shawnacee. It’s in the dinning room.

I got this beautiful candle holder and candles from Ross. Because we do not use the fireplace I bought this so it will look like a fire is in the fireplace.

My big bakers rack has curly wrought iron and it’s gray. I got it from a Craigslist add for $20.00.

This is in the hall I needed it to hang the rest of my Westie Plates. I paid $15.00 for it from an estate sale store.

The Welcome sign is from my Sister in law Shawnacee. It’s in the living room/entryway/dinning room/kitchen.

This little candle holder I love it! It’s so different I got it from my friend Belen’s yard sale.

Here is my beautiful Chandler it came with the house.

Last Nights Dinner 10/03/12

Well we had Pasta with Chicken and white sauce. But I did not make the white sauce from scratch I used it from a jar.

Pasta

Butter

Garlic

Chicken

Salt and Pepper

Green Onions

White Sauce

 

 

First I started the pasta in a pot with a lid. Here I melted the butter and added some garlic to it.

 

 

Yes I do add garlic and lots of it yummy!

 

 

I had 2 Chicken Breast that I had boiled the other day so I shredded it and put it in the skillet with the butter and garlic.

 

 

After I added the Chicken to the butter and garlic I added salt and pepper to it and let it heat up.

 

 

Then I added the Pasta to the boiling water.

 

 

I cut up the green onions with my Pampered Chef knife and it works awesome 🙂 And there is my White sauce I got it from Walmart.

 

 

After 11 min. I drained the pasta and put it back in the pot.

 

 

Then I added the white sauce, chicken and the green onions.

 

 

Then I stirred it altogether and the family loved it!!! Now I have to tell you I have made the sauce from scratch before but right now I am working 2 jobs so I used the jar sauce and it was just fine.

Yummy Bacon Cheeseburgers

Yummy Bacon Cheeseburgers calls for:

Hamburger

Bacon

Onions

Tomatoes

Pickles

Buns or sour dough bread 🙂

And the Condiments that you like

I cut the bacon in half. I liked it better that way. And fried them in my beautiful cast iron skillet. And as you can see I have my awesome fried potatoes frying to go with my Yummy Bacon Cheeseburgers.

Now I bought these Burgers already made like this from Safeway for half price. I seasoned them with season salt and lemon pepper and they where very good! Oh yes and you can see my Pumpkin Spice Latte on the counter 🙂

I sliced an onion and fried it in the bacon grease. Yummy!

Then I fried the burgers!

Here is the bacon and onions ready to be put on the Yummy cheeseburgers.

This is a home-grown tomato from my friend Belen’s garden. Look how red it is and it has so much flavor.

Now I used Sour Dough Bread. 1 because that is all I had and 2 because it’s my husbands favorite. I put a little mayo and mustard on mine. My husband’s was plain.

Then I added the Cheeseburger to it

Then comes the onion

and now the bacon

and the tomato’s

here come the pickles

Here it is! All beautiful and ready to be eaten.
