The Best Ever Potato Cheese Soup

This is a soup my Sister LaRae got from a pot luck at work it was like 32 yrs ago. It is so delicious I had to share it with you. My family loves it so I make it every winter.

POTATO CHEESE SOUP

1 lb of bacon ( I use the thick bacon so I fry about 8 slices ) save the bacon grease!

3 to 4 tomatoes

1 bunch of green onions

5 lbs of potatoes or as much as you like. I like lots of potatoes so I make a big pot that covers 2 burners and do 10 lbs.

8 to 16 cups of Chicken broth

1 can of green chilies. Lg or small  what ever you like or as many as you like.

1 can of milk

and a bunch of cheese ( we like Monetary jack or Mozzarella cheese )

Fresh French bread and butter

This is the thick bacon I buy. So first you fry the bacon then set it aside.

While the bacon is frying I’m cutting up the tomatoes

and green onions to put in the bacon grease.

Then you let it cook for about 20 min.

While I’m frying the tomatoes and green onions in the bacon grease I’m peeling the potatoes and cutting them like this.

Now I put like 8 cups of water then I put 4 tbs of the chicken broth powder and whisk away. You can put it to your liking you can also use canned broth what ever you like.

So I have the potatoes cooking til tinder.

Chop the bacon

Here I have the green chilies and the can of milk waiting to be put in the soup.

After the tomatoes and green chilies are done add them to the boiling potatoes and Chicken broth.

Then add the green chilies and bacon to the soup.

When the potatoes are tender and ready to eat add the milk and some cheese.

Have a bowl of cheese ready so people can put cheese in their own bowls to there liking.

The First Enchiladas I ever made

Perfect Enchiladas       Recipe courtesy of Ree Drummond

Ingredients

SAUCE

1 tablespoon canola oil

2 tablespoons all-purpose flour

One 28-ounce can enchilada or Mexican red sauce

2 cups of chicken broth

1/2 teaspoon salt

1/2 teaspoon black pepper

MEAT

1 tablespoon canola oil

1 pound of ground beef

1 medium onion chopped

Two 4-ounce cans diced green chilies

1/2 teaspoon salt

10 to14 corn tortillas

Canola oil, for frying

1/2/ cup chopped black olives

1 cup grated sharp Cheddar cheese

Chopped fresh cilantro, for garnish

Preheat the oven to 350 degrees f. For 40 min.g

Beans and/or rice for serving

Frying my ground beef with garlic and….

Onion I chopped it up and added it to my ground beef and garlic.

After I fried it I put it in a bowl then I added…..

Yes Green chilies

I mixed the green chilies in the fried ground beef, garlic and onions. Then I took a bit and I could not believe how good it was. Now it’s ready to make the enchiladas.

Then I grated the cheese and it’s ready to go in the enchiladas.

Here are my olives and green onions

Now I’m ready to make the red enchilada sauce

Putting the flour in it

Cooking the flour and oil

Then I added some chicken broth and let it heat up

Then I added 1 can of red enchilada sauce

Here it is ready to dip the tortillas

then I add cheese

ground beef

Olives and green onions

I put some sauce in the bottom of  the pan and start filling it up with some yummy goodness

I topped it off with the left over cheese, olives and green onions

Just pulled out of the oven and ready to serve. And I have to tell you they were so Delicious you have to try them.

The Best Coffee made from Home

I bought some Starbucks Coffee and had the grind it for me. Well because I do not have a grinder. So I bought the House Blend.

 

Here is my coffee Medium House Blend. I put about 3 big spoons fulls of the House Blend then I add some magic to it!

 

 

The magic is the Cinnamon Plus from Pampered Chef. I put about 1 tea spoon over the coffee grinds put the water in the pot and wait for it to brew.

 

 

While brewing it is smelling so wonderful. Just about ready to start my day!

 

 

Here is my new coffee cup I got it from Walmart on Saturday when I was in Napa with my Mother. I bought her and my girls one too 😉 They are our Coffee / Tea cups. Now I do add creamer to my coffee and I did not get a picture of it but it’s Cinnamon Vanilla ( coffee mate ). As you can see I love Cinnamon plus. Lime, Garlic and Cilantro Rice

If you like lime then you will really like this rice dish. I got this rice dish from the Pioneer Woman.

For the ingredients;

Rice

Oil or Butter

Garlic

3 Limes

Chicken Broth

Cilantro

 

Now I always use butter this is the first time I used oil. And it worked just fine. So I put some oil in the skillet with some minced garlic. You can also put in an onion at this point.

 

 

Then I stirred in 3 cups of rice and let it got lite golden brown.

 

 

Pour in 6 cups of chicken broth. The zest and juice of 2 limes. Sorry I did not have pictures of the limes.

 

 

Bring it to a boil. Then put a lid on it turn it to low and let it simmer for 20 min.

 

 

While the rice is cooking I chop the cilantro.

 

 

After it’s done I juice 1 more lime and put it in with the cilantro mix it all together and it taste delish.

We had this with Enchiladas I will be blogging that one next.

Here is my Biscuit Cutters Woo Hoo! You know I have never owned Biscuit Cutters before. And now I can’t say that because I own some. Now I’m going to make an egg in the hole just like the Pioneer Woman Ree Drummond. I will blog it.

Biscuit Cutters

Set of four includes 1 1/2 inch, 2 1/2 inch,  3 inch and 4 inch diameters that nest in a storage container, dishwasher-safe. As written in the Pampered Chef book

 

 

Check out this cool thing. It’s a Mini Measure-All Cup. It comes in 1 cup and 2 cups. This time I got the 1 cup. If it is like the picture that is where you would put the dry ingredients. Turn it over and that is where you would measure the wet ingredients.

Fall is here

Fall is here so I added a little fall color to my dinning room. I will be adding more soon. So for now I put some leaves around my candles to add some fall colors to them and I think they are beautiful:)

 

 

Here is another look at them in more light and the fall colors look much brighter.

 

And here they are with the candles lite. So beautiful. Now keep an eye out for the change. It will be coming to these 😉 I just need to go shopping 😉 And that I love to do!

 

 

I added the fall green leaves on the top of my small bakers rack. It just adds a little something I love it!

 

 

 

I added some colorful fall leaves to this table. I have to tell you I just love this table I got it from my Sister-in-law. I’m so happy she redecorated her house. Now my house is beautiful!

 

 

Here it is with the candles lite. It just makes me smile 😉

 

 

Now here on my big bakers rack so far I have just added some fall leaves to the 2nd shelf. More to come 😉

 

 

Here is my dinning room with a little fall color added to it. I’m so excited to add more and I will keep you posted on that with an up coming blog. I thought it was so funny last week someone said that it looked like a French Bistro. Now that made me smile. I did that without even trying 😉 It just all went together!

Blackberry Cobbler

I got this recipe from the Pioneer Woman Ree Drummond. My family loves it!

Ingredients:

1/2 stick of butter. Now I have used 1 stick and it works great. Then I use that same stick to butter the pan you are going to bake it in. Then melt what is left.

1 1/4 cups of sugar

1 cup of self-rising flour

1 cup of whole milk

2 cups of fresh ( or frozen ) blackberries

Whip cream and/or ice cream for serving

Here is my touch I add 2 or 3 handfuls of white chocolate chips

Bake at 350 for 1 hour

This is what I bake the cobbler in. The lid is for after it has cooled down and so it well stay fresh.

 

 

I washed the blackberries and put them on a paper towel to dry them. Now I’m sure this is just 1 cup not 2 cups. But the price of blackberries right now is just to high and this amount works for us.

 

 

I just put another paper towel on top to dry them.

 

 

1 cup of self-rising flour.

 

 

1 cup of sugar added to the 1 cup of self-rising flour.

 

 

Whisk the self-rising flour and sugar together.

 

 

Add 1 cup of milk to the self-rising flour and sugar.

 

 

Whisk them all together.

 

 

Butter the baking dish you are going to use.

 

 

Then put the remaining butter in a microwave safe dish so you can melt the butter to put in the batter.

 

 

Add the melted butter the self-rising flour, sugar and milk.

 

 

Pour the batter in the baking dish.

 

 

Now to add the goodies 🙂

 

 

At this point I add some delicious white chocolate chips.

 

 

and some delicious blackberries.

 

Then I put the 1/4 cup of sugar all over the top.

 

 

Now it’s ready to put in the oven at 350 for 1 hour.

 

 

1 hour later it will look like this and taste wonderful with some ice cream and/or whip cream on it or even with out the ice cream and whip cream it still taste wonderful 🙂

I bought this from my Pampered Chef party. It is Cinnamon Plus Spice Blend and it is out of this world. If you like to bake you need to get some of this stuff.

Cinnamon Plus Spice Blend has in it:

Cinnamon

Nutmeg

Allspice

and

Orange peel

And is smell wonderful 🙂

And the price is $6.25

With the Holidays coming I will be sharing for sure one recipe using this Cinnamon Plus Spice Blend. I can’t wait to show you. It will be an awesome dish to take to party’s. I would say it’s perfect for orderves. If you would like to get some I can help you with that. Plus it can be shipped right to your home.

July 3rd

July 3rd we went to the singing flag in Concord Ca. Every year Calvary Temple put on a 4th of July show. As you can see the huge Flag well where the strips are singers stand in the strips and sing lol. They have all kinds of things going on like dancers, kids, a lot of patriotic songs and acts. Its a lot of fun. I would have gotten more pictures but some people came and set right in front of me and I did not want to stand and get in the way of the people behind me. But we had a wonderful time. The show is every year July 2,3, and 4. And if you want a good set you would have to get there at 5:00am. A friend did it and there were a lot of people in line to put out there blanket for the evening show. The show starts at 7:30pm then at 9:30 are fireworks. It was fun!

4th of July Jello Cake

Years ago I went to a cookie party and one of the goodies they had was a Jello Cake.  I loved it and had to share it with my family. And they loved it! It is so cool and refreshing.

1 box of cake mix ( white or yellow )

1 lg box of Jello ( any color or flavor you like ) or

2 sm boxes ( with 2 different colors or flavors )

1 Cool Whip

1 lg spoon with a big handle ( hahaha )

 

So you bake the cake as directed. Let it cool. After it is cool off take the handle of a large utensil and poke holes all over about 2 inches apart. Now if you use 2 small boxes put 1 cup of hot water and 1 cup to cold water. Stir and pour over half of the cake. Then do the same with the other small box. Stir and pour over the other half of the cake. For the large Jello  in a bowl put 2 cups of hot water and 2 cups of cold water then add the jello to the water. Stir then pour that over the cake with the holes in it then put it in the refrigerator for about 2 hour or longer if you can. Then cover the top with the cool whip. At this point you can add fruit like I did or what ever you like. It will be so good!!!
