The First Enchiladas I ever made

Perfect Enchiladas       Recipe courtesy of Ree Drummond

Ingredients

SAUCE

1 tablespoon canola oil

2 tablespoons all-purpose flour

One 28-ounce can enchilada or Mexican red sauce

2 cups of chicken broth

1/2 teaspoon salt

1/2 teaspoon black pepper

MEAT

1 tablespoon canola oil

1 pound of ground beef

1 medium onion chopped

Two 4-ounce cans diced green chilies

1/2 teaspoon salt

10 to14 corn tortillas

Canola oil, for frying

1/2/ cup chopped black olives

1 cup grated sharp Cheddar cheese

Chopped fresh cilantro, for garnish

Preheat the oven to 350 degrees f. For 40 min.g

Beans and/or rice for serving

Frying my ground beef with garlic and….

Onion I chopped it up and added it to my ground beef and garlic.

After I fried it I put it in a bowl then I added…..

Yes Green chilies

I mixed the green chilies in the fried ground beef, garlic and onions. Then I took a bit and I could not believe how good it was. Now it’s ready to make the enchiladas.

Then I grated the cheese and it’s ready to go in the enchiladas.

Chopped the cilantro now it’s ready

Here are my olives and green onions

Now I’m ready to make the red enchilada sauce

Putting the flour in it

Cooking the flour and oil

Then I added some chicken broth and let it heat up

Then I added 1 can of red enchilada sauce

Here it is ready to dip the tortillas

then I add cheese

ground beef

Olives and green onions

I put some sauce in the bottom of  the pan and start filling it up with some yummy goodness

I topped it off with the left over cheese, olives and green onions

Just pulled out of the oven and ready to serve. And I have to tell you they were so Delicious you have to try them.

My easy Spaghetti Dinner

First I fry a pound or so of hamburger. I would fry some onions and garlic then put the hamburger in but I did not have an onion. So I started the hamburger and put in a 3 table spoons of minced garlic in it. And I used one of my skillets I bought from Sur La Table 🙂

 

 

Now this tool is an awesome little thing. It’s called a Mix N Chop! From Pampered Chef. I used to the help me in frying the hamburger. Oh yes and check out my skillet from Sur La Table it’s so easy to clean after use. I do let it cool down first. So it won’t warp.

Here is the Spaghetti I cooked it for 12 min.

 

 

Okay I’m very sorry I do not have a home-made spaghetti sauce. I have never made a home-made sauce. I would love to make one that I can get red of the acid so my family would eat it. Heart burn this is why! I love spaghetti so I make it now my girls might have a little but my husband and son will not touch it because of heart burn.

So anyways I used this sauce one of my favorites. And it was really good!

 

Then I put it all together. And let all the flavors marry. Now this is how my Mom would make it. Well she loves elbow macaroni and so do I. But my husband and girls like long string spaghetti. So this is how I make it 🙂

 

 

And to top it off I put Cheddar Cheese. And it was very yummy.

Teriyaki Chicken with Mac n Cheese

Here is the Teriyaki Chicken. I put chicken thighs and 2 chicken breast. I started them frozen. Then I put so minced garlic, brown sugar and some Teriyaki sauce. Put it in the crock pot all day on low. And it turned out so good.

 

In a lg bowl I grated Cheddar cheese, Monterey Jack cheese and Mozzarella cheese.

 

In 3 small bowls I put 2 table spoons of flour, In the next bowl I put 1 egg, in the third bowl I put salt, pepper and dry mustard.

 

In a lg bowl I put about 2 1/2 to 3 1/2 cups of milk.

 

My pasta is cooked and drained awaiting the cheese sauce. In the next pot I have started my cheese sauce. I melted some butter then I put a small amount of minced garlic in the butter. Then I added the flour after a few min. I added the cold milk. After it heated up I put in the salt, pepper and dry mustard. After it is hot I took a soup ladle and added the hot sauce to the egg slowly.  Then I added the egg to the sauce.  I stirred it for a few more min. then I added the 3 cheeses to the sauce. And of course I had to try it and it was so yummy!!

 

I poured the cheese sauce on the pasta.

 

I buttered this dish and poured the mac n cheese in it. The dish was a little small and it started over flowing. So I took some out and Tiffany, Tony and I ate it.

 

I had saved some cheese to put on top before I baked it.

 

350 degrees and 20 min later this is what came out of the oven.

 

To go with the Teriyaki Chicken I cut and cooked in some oil and butter an onion and 1 huge red bell pepper.

 

Then I added some crushed pineapple about 3 table spoons to it after the onions and peppers were cooked all the way.

 

And here it is all on the plate. My husband loved it! Well they all did my son and daughters.
