Blackberry Cobbler

Standard

I got this recipe from the Pioneer Woman Ree Drummond. My family loves it!

Ingredients:

1/2 stick of butter. Now I have used 1 stick and it works great. Then I use that same stick to butter the pan you are going to bake it in. Then melt what is left.

1 1/4 cups of sugar

1 cup of self-rising flour

1 cup of whole milk

2 cups of fresh ( or frozen ) blackberries

Whip cream and/or ice cream for serving

Here is my touch I add 2 or 3 handfuls of white chocolate chips

Bake at 350 for 1 hour

This is what I bake the cobbler in. The lid is for after it has cooled down and so it well stay fresh.

 

 

I washed the blackberries and put them on a paper towel to dry them. Now I’m sure this is just 1 cup not 2 cups. But the price of blackberries right now is just to high and this amount works for us.

 

 

I just put another paper towel on top to dry them.

 

 

1 cup of self-rising flour.

 

 

1 cup of sugar added to the 1 cup of self-rising flour.

 

 

Whisk the self-rising flour and sugar together.

 

 

Add 1 cup of milk to the self-rising flour and sugar.

 

 

Whisk them all together.

 

 

Butter the baking dish you are going to use.

 

 

Then put the remaining butter in a microwave safe dish so you can melt the butter to put in the batter.

 

 

Add the melted butter the self-rising flour, sugar and milk.

 

 

Pour the batter in the baking dish.

 

 

Now to add the goodies 🙂

 

 

At this point I add some delicious white chocolate chips.

 

 

and some delicious blackberries.

 

Then I put the 1/4 cup of sugar all over the top.

 

 

Now it’s ready to put in the oven at 350 for 1 hour.

 

 

1 hour later it will look like this and taste wonderful with some ice cream and/or whip cream on it or even with out the ice cream and whip cream it still taste wonderful 🙂

I just got this from my Pampered Chef Party. I love the recipes there are about 5 recipes on it. With the measurements on it. It’s awesome!

 

 

I tried to get it so you could read the recipes but I think it’s to small. I will be using it very soon and I will keep you posted on how it works. Now I just need to go shopping 🙂

Cinnamon Plus Spice Blend

I bought this from my Pampered Chef party. It is Cinnamon Plus Spice Blend and it is out of this world. If you like to bake you need to get some of this stuff.

Cinnamon Plus Spice Blend has in it:

Cinnamon

Nutmeg

Allspice

and

Orange peel

And is smell wonderful 🙂

And the price is $6.25

With the Holidays coming I will be sharing for sure one recipe using this Cinnamon Plus Spice Blend. I can’t wait to show you. It will be an awesome dish to take to party’s. I would say it’s perfect for orderves. If you would like to get some I can help you with that. Plus it can be shipped right to your home.

My Son’s Favorite Meal

I work late a lot so the night before I made this I boiled about 4 to 5 boneless / skinless chicken breast. I started them frozen I put the water in the pan, put the chicken in the water and turn it on high and set the timer for 1 hour. Then I let it set in the pan with no heat on for 30 min. Then I put it in the refrigerator.

Oh and by the way the name of the dinner is 7 Cheese Tortellini with chicken and white sauce.

All you need is:

Chicken

7 Cheese Tortellini

White sauce ( homemade or in a jar )

Butter

Garlic

Salt and pepper

Season salt

The next day I washed the chicken and cut it in chunks. Then I put some butter and garlic in the cast iron skillet to heat up the chicken and it makes it a little brown and the flavor is awesome.

Here is the tortellini  I get it from Costco it comes in a 2 pack. I freeze one and use one.

It’s very fragile. You only have to cook it for the most 8 min. After the water is already boiling that is.

Here I have the Chicken and Tortellini cooking. See the browning on the chicken? It is so delicious!

I mixed it all together and it is ready to serve.

To go with the 7 cheese Tortellini and white sauce is of course Garlic Bread.

And not just Garlic Bread but garlic bread with cheese 🙂

My Friend Robin’s Chili

Well because I cook this in the crock pot. The night before I cooked the hamburger. So I would not have to do it in the morning. Because I get up at 6:00 anyways for work. I love my sleep so I did it the night before 🙂

 

So after the meat is all fried or browned I put in some taco seasoning in the meat. Now you can use a Rotisserie Chicken instead of hamburger meat. Then I put it in the refrigerator for the night. Then the next morning I put it all together 🙂

 

Now here is everything that goes in it excepted the hamburger.

 

So the next morning I heated up the hamburger in the microwave then put it in the crock pot.

 

Then I put in one can of black beans.

 

And one can of pinto beans.

 

And 2 cans of white beans.

 

I chopped up 1 bunch of green onions and put them in.

 

Now for the cilantro I put one bunch. You can put 1/2 of a bunch or to your liking. We like cilantro so to our liking we put one whole bunch 🙂

 

Now put in a can of green enchilada sauce.

 

And 1/2 of a jar of salsa verde.

 

Then I stirred the chili.

 

Then I added 1/2 cup of chicken broth.

 

Now it’s time for the spices. Cumin, Chili powder, red pepper flakes, Salt and pepper. Put all to your liking!

 

Oh yes and we can not forget the Garlic lol I put about 3 spoon fulls of minced garlic. I could have put more to my liking. So put to your liking 🙂

 

 

 

Then stir it all together put a lid on it keep it on low. Everything is already cooked we just want to marry all the flavors for a yummy chili.

 

When it’s done like 6 to 8 hours later here it is.

 

Then add some grated cheese to it any kind. This one is Monterey jack Cheese.

 

You can have it with some chips like I did or some Mexican corn bread. I did not get home til after 8 or I would have made some Mexican corn bread 🙂

 

And here is the left overs. I filled to Mason Jars. I love me some Mason Jars. This weekend I went and bought more Mason Jars 🙂

Here is the recipe:

Hamburger or Rotisserie Chicken

1 can of black beans

1 can of pinto beans

2 cans of white beans

1 can of green enchilada sauce

1/2  Jar of salsa verde

1 Bunch of green onions

1 or 1/2 of cilantro

1/2 cup of chicken broth

Cumin to your liking

Chili powder to your liking

Red pepper flakes to your liking

Salt and pepper to your liking

Garlic to your liking

Cook in crock pot all day 🙂

To have with the Chili:

Cheese

Chips

or

Mexican corn bread

Teriyaki Chicken with Mac n Cheese

Here is the Teriyaki Chicken. I put chicken thighs and 2 chicken breast. I started them frozen. Then I put so minced garlic, brown sugar and some Teriyaki sauce. Put it in the crock pot all day on low. And it turned out so good.

 

In a lg bowl I grated Cheddar cheese, Monterey Jack cheese and Mozzarella cheese.

 

In 3 small bowls I put 2 table spoons of flour, In the next bowl I put 1 egg, in the third bowl I put salt, pepper and dry mustard.

 

In a lg bowl I put about 2 1/2 to 3 1/2 cups of milk.

 

My pasta is cooked and drained awaiting the cheese sauce. In the next pot I have started my cheese sauce. I melted some butter then I put a small amount of minced garlic in the butter. Then I added the flour after a few min. I added the cold milk. After it heated up I put in the salt, pepper and dry mustard. After it is hot I took a soup ladle and added the hot sauce to the egg slowly.  Then I added the egg to the sauce.  I stirred it for a few more min. then I added the 3 cheeses to the sauce. And of course I had to try it and it was so yummy!!

 

I poured the cheese sauce on the pasta.

 

I buttered this dish and poured the mac n cheese in it. The dish was a little small and it started over flowing. So I took some out and Tiffany, Tony and I ate it.

 

I had saved some cheese to put on top before I baked it.

 

350 degrees and 20 min later this is what came out of the oven.

 

To go with the Teriyaki Chicken I cut and cooked in some oil and butter an onion and 1 huge red bell pepper.

 

Then I added some crushed pineapple about 3 table spoons to it after the onions and peppers were cooked all the way.

 

And here it is all on the plate. My husband loved it! Well they all did my son and daughters.

The 2 side dishes to go with my Mamma’s Lasagna

Standard

First you put some butter in a sauce pan after it is melted put a bag of frozen corn in.

Just stir it around get some melted butter on as much as you can while frozen.

Then you put a lid on it and turn it down to med. heat. Keep an eye on it so it will not burn. I would say check it about every 5 min or so and give it a stir.

When it’s done you can season it with what ever you like. We like garlic salt and lemon pepper. And the corn is ready to serve.

Next comes the garlic bread. First I put Raw or Minced garlic in softened butter. Mix well.

Then I spread it on some sourdough bread.

Then I sprinkle some Parmesan Cheese on them and bake them at 350 for 5 to 8 min depending how toasty you want them. Then I turn on the broiler to high and let it broil for about 1 1/2 min or until golden brown.

This is how we like it! My family loves the garlic bread.

My Mamma’s Lasagna

Here is every thing we are having for dinner. Lasagna, Corn and Garlic Bread. Well all the in ingredients. Here is the recipe:

1 box of Lasagna Noodles

1 or 2 lbs of hamburger ( or what ever you would like )

Garlic ( as much as you like ) put it in while frying the hamburger

1 can of sliced olives

Cottage Cheese

Spaghetti Sauce

Cheese

Cover with foil

Bake at 425 for 45 min.

 

First put some garlic in the pan with the hamburger and fry it.

 

Then drain the hamburger and while you are frying the hamburger you can

 

Grate the cheese. Now I used Cheddar and Jack Cheese.

 

Here the Lasagna Noodles are cooking.

 

Now I got whole black olives and I sliced them to save money.

 

I just had to show you my Pampered Chef can opener. I love it!!! It works great.

 

Here is the Cottage Cheese. I have to tell on my self. I opened the Cottage Cheese and stirred it and I seen these little Yellow things in there and it was pineapple. But I used it anyway and you could not taste it.

 

After I saw the Pineapple I read the name on it just a little to late!

 

Here is my work station.

 

Here we go!

 

Put some sauce on the bottom of the dish.

 

Just spread it all over the bottom of the dish.

 

Lay the Noodles on the sauce.

 

Put more sauce on the noodles.

 

Then put some hamburger. I make 2 layers so I use half of the hamburger on both layers.

 

Then you sprinkle on the olives.

 

Now the Cottage Cheese. I just put some on it and then spread it around with a spoon.

 

Here comes the Cheese.

 

After the Cheese spread more sauce on the cheese. Do the same for the next layer Noodles, Hamburger, Olives, Cottage Cheese, Cheese and Sauce. For the top cover the last layer with the noodles, the rest of the sauce, the rest of the olives and the rest of the cheese.

 

After you bake it at 425 for 45 min. this is what it looks like. And it taste even better!

4th of July Jello Cake

Years ago I went to a cookie party and one of the goodies they had was a Jello Cake.  I loved it and had to share it with my family. And they loved it! It is so cool and refreshing.

1 box of cake mix ( white or yellow )

1 lg box of Jello ( any color or flavor you like ) or

2 sm boxes ( with 2 different colors or flavors )

1 Cool Whip

1 lg spoon with a big handle ( hahaha )

 

So you bake the cake as directed. Let it cool. After it is cool off take the handle of a large utensil and poke holes all over about 2 inches apart. Now if you use 2 small boxes put 1 cup of hot water and 1 cup to cold water. Stir and pour over half of the cake. Then do the same with the other small box. Stir and pour over the other half of the cake. For the large Jello  in a bowl put 2 cups of hot water and 2 cups of cold water then add the jello to the water. Stir then pour that over the cake with the holes in it then put it in the refrigerator for about 2 hour or longer if you can. Then cover the top with the cool whip. At this point you can add fruit like I did or what ever you like. It will be so good!!!

Spanish Rice

My friend Danielle gave me a recipe she got from her Mom. I did a little change to it. But then I might change it because I do not have everything it calls for 🙂 Or I add more things to it so this is Danielle’s Mom’s and Mine put together!

1/2 stick of butter

1 1/2 cups of rice

Garlic

3 cups of water now you can add chicken broth powder or use already made chicken broth.

1 small can of tomato sauce

1 Small can of green chiles

2 green onions

1/2 bunch of cilantro

Here is goes!

So first I start out melting the butter then I stir in the rice and garlic. Fry it til it is light brown. Then I add the water and chicken broth powder a tbsp for each cup of water. Also at this point I put in the tomato sauce and the can of green chilies. After it comes to a boil.

I turn it to Med heat cover it and set the timer for 20 min. Then I cut up the green onions and the cilantro to add when it is done.

Here it is with everything added. But I do have to e tell you I did not use the tomato sauce because I did not have any or I would have used it. But it tasted great without it too. Oh yes and because of the chicken broth I do not add salt well I do add salt to my plate. I get in trouble when I add salt to the dish. It will taste great to me but to salty for everyone else.
